These 4 oz. cups of diced carrots go well with frozen green peas for one serving as a side dish. I don't like canned peas at all, but frozen ones just need to be heated through and drain off the water in these carrots, then combine both and heat with a Tablespoon of butter melted into them. Make a brown rice pilaf using cooked brown rice, these carrots, frozen green peas, diced sweet red onion, and sliced mushrooms, all combined and heated through. Anything leftover can be used the next day for fried rice by adding a cooked scrambled egg and heating through. I add 2 Chung Vegetable Egg Rolls, green tea, and fortune cookies for a great meal.
