I was skeptical when I saw the "swap-out" commercials, having been to the restaurants they used in their campaigns both in Chicago and Scottsdale. But, I have bought the USDA Choice Tenderloin or "filet" four or five times now and I am so pleasantly pleased every time! Prepared in the "restaurant" style, I sear them in a cast iron skillet and finish them in the oven. This cut of beef rivals any I've bought at a high-end butcher shop. No joke, it cuts like butter! My dad, who was a steak snob, couldn't stop raving about it either!. Oh, and incidentally, two of the steaks I bought were marked down because they were nearing their "use by date"!
